You should set the max velocity somewhere below the max speed at which your
step motors will reliably move. This is to prevent stalling, lost steps,
etc.
The fast jog should be set to whatever speed you feel comfortable with when
jogging. (Of course it will be limited by the max velocity parameter.) Too
much and you might have a wreck. Too slow and you get sleepy waiting for
the table to return home. Slow jog is for when you get close to your
position and want to crawl the last few thousandths.
