take a look at the LS7084 chip at usdigital
http://www.usdigital.com/products/ls7083-84/

the maxnc phase pinouts on the parallel port seem to be
X axis motor on pins 2,3,4,5 Y on 6,7,8,9 and Z on 1,14,16,17

the pattern for full stepping on the X might look something like this

2,3,4,5 pins
1,0,1,0 state1
0,1,1,0 state2
0,1,0,1 state3
1,0,0,1 state4
1,0,1,0 state1

and by stripping off pins 2 and 5 we get the standard
quadrature encoder A and B outputs
A,B
3,4 pins
0,1 state1
1,1 state2
1,0 state3
0,0 state4
0,1 state1

that the the LS7084 can convert to step and direction signals for the drives
