Sure, but you'll have to get the pinout information from the manufacturer.

Barring that, you'd need to take them apart and at least trace out the
power wires.

The encoder will have a grey-code output, so you would need to provide
a grey-code to binary converter. I know how to do this in an FPGA or
in software.
