You have 2 choices on a 6 wire motor. You can tape off the center taps
and wire each as full coil. Your other choice is to tape off the end
wire on each coil and wire from the opposite end to the center tap. If
you go this way it really does not matter which half coil you use in
each winding, only that they are connected in phase. If you connect one
coil the opposite phase of the other no damage will be done, but the
motors will just sit there and buzz when you try to move them as the
coils are fighting each other.

When I am working with drives or motors I am not familiar with I will
set the driver current to the lowest value possible. And frequently use
a low voltage power supply just to reduce the chance of letting the
smoke out. Others on the list put a light bulb in line to act as a
safety device.
