USdigital has some that are like $19 (E4 series) each that are only like .700" in daimeter and fit a .25" shaft. Can even be mounted with an adhesive back. I'd suggest mounting with the screws though. They mount nicely on the nema 23 motors. Res up to 300 in quadrature (1200 counts per rev)

Dan Mauch at Camtronics has or did have some cheap encoders.
