Joe,

I don't think that you are missing anything. Most controllers (G01) can
move in X, Y and Z at the same time. This is still a straight line. It just
takes a lot of short lines to make up a curve in 3D space.

The software to do this is another subject. It just costs a lot to create
cad/cam software that works in 3D space.
