Alex,
It sounds like they are running unipolar stepper motors in a bipolar
configuration.
As for the voltages I can't help you much. If you measure one of the
coils you in theory could use ohm's law to work out what you need. But
it has been so long since I have messed with electronics I have
forgotten how to do all that. There should be something on the web
somewhere. Google ohm's law and see what you come up with.
