Alan,
Yes. Strain gauges are used in some commercial probes and center
finders. As Smoke mentions, you will need to select an appropriate
force level for your application. And as Dave points out, be careful
of "overtravel" causing loads exceeding (or not accounted for by) the
mechanical design.
In a digitising "arm", I think I'd use something else. Although for
the contact point, it could be a good choice. (lets us know we
touched)
