the most common ones that arent normally used up are probably
the rs232 and MIDI ports (usually on the game port connector)
there are alot of well documented MIDI interface projects on the web

as the MIDI port is realy just an odd speed opto-isolates serial port
it shouldnt take much modification to hook any of these up
to a standard rs232 serial port

getting them to work with EMC would be the tough bit ;-)
