As a gunsmith whose "done a few" wood projects (not just gunstocks) here's
what I'd do:

Sand bare wood with several grades of paper down to 240 first. Dampen the
sanded piece (don't soak it) to raise the grain and sand again lightly.

Apply Mini-wax stain (if I didn't want the natural oak color for some
reason)

Then I'd use a 50-50 thinned solution of Varethane finish applied one coat
at a time ...maybe two coats per day...allow to dry between coats. This is
to fill the pores. After about a week, I'd do some more sanding using 400
grit paper.

Next I'd finish using the same process with full strength Varethane.

Finally (but not necessary) you could put on a coat of clear urethane
varnish.
After a final sanding wax the project and polish it.
