I've been thinking about this some and have looked into optical mouse
sensors. They're available today with 800 cpi resolution in both the X & Y
direction and I'm thinking that if we could skew the travle direction to 45
degrees and combine (somehow) the X & Y outputs we could achieve a resolution
of 800 x 1.414 or 1131 cpi. See:
