I believe I have found the solution to my too large size servo
motors :

4 shaft encoders at $39/ea from usdigital.com and I should be on my
way (now I just have to decide what resolution I want... decisions!).
At 3" diameter with .375" shafts I believe they are the right
physical dimensions for my Nema-34 mounts. It will probably require
some drilling and tapping but this will be far easier than making
entirely new plates.
If anyone is interested in my larger size servo motors I will be
selling them. I'd like to give you guys first crack at them before I
put them up on ebay (especially since everyone has been so helpful).
I'd like to get what I paid for them which is $100 each plus
shipping. According to my observation and the original ad they are
brand new. Here is a link to the original ebay posting from the guy

Additionally, I have printed out the instructions for the encoders
and this will come with them.

PS I hope I'm not violating the list rules mentioning the servos for
sale, but I couldn't find anything in them about not offering
something to the list before you offer it somewhere else. If I've
offended anyone by offering the motors for sale please let me know
and I will refrain from doing so in the future.
