A good question.
I am not sure there a clear cut general answers.
Maybe other users of the machine that have done
the convertion would be a good source of info.

The upper end of torque should be less then what is
required to breaking any machine components of course
for safety.

The lower end of torque should be enough to enable you
do do the machining on the materials you like to machine.

To get the fastest rapid speeds for your setup you have to
configure to stay on the lower end of torque.

Most depends on the power of the motors stepper or servo ratios
and rigidity of the machine.
Usually People aim for the middle and allow some easy way of
altering the gearing ratios later.
