Servo motors have a very different driver, and different motor
characteristics.

Steppers are current limited with a chopper circuit, pulse driven, and
the higher voltage gets the di/dt (current change in the stepper coil,
hence torque) much better behaved at high pulse rates.

For all I know, you could do the same thing on a servo motor, but
that's not something I know much about.

Servo, none... (my guess) stepper, as much as you want, but no more
current than the nameplate says...
