Just connect power to them and watch the outputs go up and down with a
voltmeter. As long as they are going to V+ and GND, they are working
fine. If they are quadratures, there will be two outputs.

If you wanted to get fancy, you could chuck the motor shaft in a lathe
and look at the encoder output on an oscilloscope, both channels if
necessary.
