Hi,
For a simple circuit where you can actually see the encoders
counting in binary with LEDs, look at:
http://www.usdigital.com/products/ls7183-ls7184/
The chip(ls7183) will take quadrature from the encoder and drive a
counter chip. You could use the output of the counter chip to drive
LEDs. I ?think? the 74193 type counter shown in the schematic will
source enough current to drive LEDS through some resistors.
