The coils you want to wind must be pretty small. Back in the "old
days" (1983) and I was a power supply engineer, we had coil winders
that were little more than modified lathes. There had to be all kinds
of backlash and such in the traverse mechanism. Of course we were
winding wire from #28 up to #10. The wire will actually wind tight
if you keep adequate tension and "level wind" it across the bobbin at
anything close to the right pitch. You do not need extreme accuracy
especially after the first layer because the "grooves" as Dave
mentioned, force it to lay down correctly. The most important thing
we used was the turns counter on the spindle (mechanical) that told
us the right count. The operators would load a bobbin and with a
variable speed foot control they would carefully wind the first layer
(some did it using their fingers to guide the wire) and then would
ramp the RPM's up until the mechanical counter was close to the
specified number and they would slow down to get the exact count.

With todays CNC stuff and electronics that could all be automatic.
Now if you want to wind toroids that's a different story!!
