I'm sure you can use QC terminals, as long as they are a snug fit.

Yes, absolutely. The oily contamination and vibration that are present
will cause non-gold connectors to develop bad contact after some time,
and the machine could go into runaway.

Yes. Nothing is guaranteed, but gold does improve the contact reliability.
If you can strap the connector onto the encoder body, or strap the halves of
the connector together, that may help keep the contacts from working back
and forth against each other.
