Interesting problem. Either type can give you just about any movement
you wish if they are properly controlled. In a stepper, you would
have to feed it positioning steps (or micro-steps) from a programmed
sequence. If I had a reason to build a special-purpose, simplified,
stand-alone, analog-only instrument, I might prefer the servos, though
I've not done my own design of one (yet). There is also a simple
algorithm which uses addition and two variables to create a
near-sinewave with about 4% distortion, as well as many flavors out on
the Internet.
