If a 600in-oz. stepper motor gives 'x' performance on a particular
machine, is there some rule of thumb to get equlivant performance out
of a servo setup? Servo torque : Stepper torque? Or is this too
simplified?

You have to look at torque curves.

In general steppers loose torque with speed but servos
do not.

An arbitrarily large stepper could certainly equal a given servo
torque at a given speed, but at some point the stepper will be
actually more expensive and have greater moment of inertia.

If you have a particular application in mind I could do a sizing
run on my software for you. I will need some details of your system.
