EMC and probing

I see in the EMC handbook that it will take input from a probe. Can
this be used to probe a surface?

I.E. - can I put a model car or some similar surface on the table and
then use EMC to probe around the top of it and have it give me a point
cloud or something else I can put into a Cad/Cam?
