Actually, this could be quite complex to implement. However, if you are
already a competent electronic-tinkerer, you might wire a 555 monostable with RC
components that produce a pulse-width nearly as wide as the period of the
fastest RPM your spindle will turn, and feel the input of the 555 (pin 2?) from
ONE channel of the encoder. The "average DC" of the output from the 555
will then be an analog approximation of the RPM. Right? But to implement a
useful circuit with this will require some knowledge and breadboard work!
