NEMA-23's tend to be lighter, if the motor is a significant part of the
mass, smaller is better.

NEMA-34's tend to dissipate heat better, if there is poor heat sinking,
bigger is better.

If the motor mounts solidly on a Bridgeport knee, who cares. If the
motor mounts to a tiny machine, a smaller motor can translate into a big
speed advantage. If your precision E/G machine doesn't handle heat very
well, the NEMA-34 will dump less heat into the table structures and
cause better accuracy.
