Use a isolation transformer before or after the autotransformer or Variac.
fuse the input and output to the ratings of the Variac, fuses cost less.
Ground the case etc.
If you are not sure of the difference between the ground wire and the
neutral wire or the concept of a grounded neutral you probably need help.
