When you full wave rectify AC you get pulsating DC at 1.414 times the RMS AC
before you apply a load. The voltage will drop under load depending on the
internal impedance of the transformer. The amount of ripple voltage under
load will depend on the size of the filter capacitor.
As for sources of transformers, try electronic surplus dealers. These should
help you get started: http://www.robotics.com/surplus.html
I bought some nice power supplies, steppers and driver boards from these
folks a few years ago; don't know what they have now:
