For whatever reason the cables/connectors for the cheap imported scales
are almost nonexistent in the US. I'm sure if there was a source for
these there would be a sizeable demand.
I've been thinking about different ways to make the connectors; and so
far my ideas have been either way expensive and complicated, or not
too difficult but kinda cheesy.

Me too. I've looked for a pre-existing connector but the spacing is
wierd. I measure the pad spacing at 0.065".
