You might look into using the "Surface Wave" type touch-screen.
These are the most durable, even scratches won't affect them.

has some good information on the various types of Touch Screens.
Most touch-screens installs and acts like a second mouse,
so if the software supports mouse control, the touch-screen will work.
They need to be kept clean.
If you sneeze on the screen, the cursor will point at it.
