Are there any schematics around for such a conversion, or are there hidden dangers to such a strategy? I'm hoping I can pull up each pin to 5v, but I lack the electronic savvy to design such a circuit myself.

If you take a 74HCT240, power it from an external 5V supply, and connect the
ground to the parallel port ground, it should do the conversion for you.
