HI Scott,
That'll work fine, just more wiring! Motors will share current (more
current available) if one big supply is used. That's about all.
If the xfmrs are identical, you can just parallel them for more current,
and use one bridge/cap. My Driver/PS boxes for Geckos use a pair of
transformers.
