Hi....you may try to use a steep angle bit to "clean-out" around the letter, depending on the angle of the "v" cutter, you would have to figure out how much and how close to clean out (or take away material) around the letter or number ......... Use you 3d software to see how much material and how much offsets to use...don't forget to reverse the letter or number!

There are other ways to do this, if you are using Vector Cad/Cam software, Fred could probably guide you though this better than I.

I am trying to model some 3D text to fabracate a steel stamping die.
The problem is that to create a stamping die, the text needs to have
a beveled or chiseled look. Where the beveled edges converge (i.e.
cross) is where the stamps image will transfer. I have tried Rhino
3D but when I try to 'taper extrude' fonts, the conversion point
(i.e. point where lines cross) varies in Z. This is due to the fact
that in Rhino you need to specify a draft angle. I don't care about
the draft angle, only where the convergence of the two draft occur.
The draft angle can vary as long as the stamp face is modeled on one
Z plane. I thought about using line fonts (font that is only a line
(or stick figure)) and extruding it this way. This would ensure the
stamp face is in a Z plane but I was unable to do this in Rhino. Any
suggestions would be appreciated.
