Well, you can use both style systems there. The 1 phase motor and pulleys
alone would give you a number of usable speeds, and a variable speed controller
and 3 phase motor would give continuously adjustable speed across the range.
putting a 3 phase motor and controller together with a pulley setup, would give
you the whole range, while the pulleys would make torque ranges available. I'm
thinking a small to middling size machine here. For that to be really useful,
you'd need something with enough beef to soak up vibration, and be sturdy enough
as well. Building a machine mainly depends upon what you want to do with it,
and how.
