I returned the plate to Metal Supermarkets, and they gave me a new one.
It's not perfect either, but appears to be a lot better. I do wish I had
a giant press and monster milling machine to flatten this out perfectly.
The pieces they sold me were cut with a plasma cutter, so stresses from
a big shear weren't an issue, though the heat might have been.
I'm using plywood for the bed beneath the steel; the torsion box idea is
worth considering. I think it's unlikely that I will ever be able to
machine steel, but I'm hoping to be able to do aluminum.
For those who are curious about what I'm doing, I have a little info,
some screenshots, and a photo of RoboFac:
