Hi CBM (name?),
Sounds like you just need to run a controller program on a PC. PCs are
cheap!
If you don't want the PC, then use a PIC or other uP to generate a
series of steps. A few input lines can select how many Oz. Other lines
can control AUX hardware.
Bryan Mumford has a nice controller for a rotary table (Sherline sells).

A CY525 or CY550 stepper motor controller chip can be programmed to
generate stepper control signals. I've used one to rotate an antenna,
and did some preliminary CNC work with them. They are quite nice for
rotary table controllers.
All it takes is a little development work!
