I don't think you will get much coupling of the magnetic fields by
stacking them and even if there was if they are oriented correctly it
could help you as much as hurt you.
However, I don't like stacking them because of the heat issues, you
will get part of the tranformers hotter than they would otherwise get
if they weren't stacked.
If you aren't pushing the transformers this probably isn't a concern,
but if the power supply is putting out close to its max rating, heat
could be a problem with them stacked.
