For high-speed applications they generally have 3 wires connected to the
vertexs of three coils arranged either in wye or delta configuration
(delta is more common, but wye is evidently more precise for
bidirectional operation).

They certainly can and do have more wires, but three is the most common,
generally speaking. I don't know about brushless servos used in CNC
applications, I'd imagine you'd want a motor with more poles to reduce
cogging at low speed.
