Hi Steve,
Avoid brushless motors unless they come with the correct driver. Every
manufacturer seems to use a different encoder and timing system. In most
cases they are not interchangeable.
Otherwise avoid servos that are rated for less than 24V or more than
100V. Ideally you want a motor with an attached encoder that is at least
200 CPR. This saves a lot of time and hassle buying and fitting an encoder.
If you want to convert a DC motor avoid silly voltages and look for
motors that are long and skinny rather than short and fat. Ideally you
want motors that are rated for low speed. Plain bearings don't work well
in this application so try to get motors fitted with ball bearings.
