I've used the recycled encoder strips and detectors from HP printers, one is currently on my mill/drill for Z axis indication using a Red Lion Gemini 1000 as the quadrature readout.
Depending on the printer, the encoders may have different resolution. The first one I salvaged had less than 300 lines per inch. The second, from an HP 1120C printer was much better, but still less than 500 lines per inch. The Red Lion counter has programmable scale factor, so I'm able to get a readout to 0.001, but there are some missing numbers on that last digit. For what I'm doing, that is mostly good enough.
The pinouts are pretty much obvious after some study. I don't have them handy, but have them somewhere.
