What makes more sense? wiring the full 220Vac through the Real E-Stop
Switch, or using a N.C. switch running off 5 volts switching a continuous
duty N.O. relay.

The only safe way is to have the E_STOP remove all power. If you want to
just shut the equipment down, then wire and use a STOP button. And the STOP
button can be monitored by the computer if desired. Often times in industry
there will be a start/run relay, it is pulled in and latched with a set of
contacts wired thru the STOP pushbutton. A stop from the operator or a loss
of power will shut the equipment off and stay off until the start button is
pushed.
The E-STOP is a mechanical switch, that stays off until manually reset. It
removes all power to the equipment, and that is what you need to do in an
emergency, whether it is a runaway, smoke, or electrical shock, hit it and
power is gone, now, regardless of what the computer or equipment is doing.
The E in E-STOP means EMERGENCY and should be used for that purpose.
