If the turns ratios on the two transformers are identical you can parallel
the windings but if they are not - even one or two turns difference on the
primary or secondary due to manufacturing tolerances and you'll have
problems as they would be fighting each other.
Paralleling the DC could make one transformer supply most of the load if
the windings aren't identical.
Ideally, if your 48v windings are center tapped would be to create two
floating 24v DC supplies using half bridge rectifiers and hook them in
series.
