The simplest way (or maybe the cheapest) is to make them from sheet aluminum,
bending an edge all the way around, and then bolting onto spacers. Drawing
the edge would look nicer than just folding a bunch of square tabs over, but would
require some sort of tooling.

You could mill them out of blocks of 1/2 or 3/4" aluminum. This would cost a lot more
for materials, but would look really neat. The X and Y axis mounts on my CNC
conversion were done by manual machining, and are typical square looking parts.
After I got 2 axes working under CNC control, I got inventive, and my Z axis drive
has a number of exotic curved parts and angles in it, as it was easy to do.
