Try this question at the Forest Products Lab in Madison, WI, USA.
They are THE definitive resource for "wood" questions in the USA. If
they don't have the answer, they will know where to find it:

And they've already done the empirical testing that Chris S
suggested, and on a number of wood types... Sometimes they work with
FPL's in other states, and the North Carolina Furniture industry
depends on them for answers to both tough and easy questions.
