Just to add to Jon's comments below...

EMC will go much higher than just 120% if you set the relevent parameter. I
have 500% feed override on one setup that is used mainly for simulations.

EMC can be controlled with low level commands via it's Tcl extensions. Or if
you feel adventurous, with the use of purpose written C functions.
You can also define toolpaths using mathematical equations.....
