I would suggest reading the stepper motor white paper on the Gecko site.
It is in the support area. It will address a lot of your below
questions. Also take a look at the group FAQ at:

Regarding your specific questions:
Not sure what you mean by hooking the drives together? You can hook them
all to the same power supply or you can use 3 power supplies. They also
obviously connect together on the logic side to the computer.
2 phase is a standard stepper motor. There are also 5 phase motors and
they take special drives. 2 phase basically means that there is 2 sets
of coils.
Regarding a power supply, no a PC supply is not appropriate for a G201.
They specify a minimum voltage that from memory is 24 V. As far as the
+5v for the G201, while you can use an external power supply that is not
the factory recommendation. They suggest you get the +5 from the
computer. If you do use an external supply you have to connect the
ground from it to the PC to complete the logic circuit.
