Surely you gest!!!! :-)) Fire & smoke time.
The two ends are opposite polarity.
The center tap is internally the connection between the two coils
which actually forms a series adding connection.
On some transformers the center tap coil wires come to the surface of
the insulation wrapper terminals and can be separated allowing you to
cross connect for parallel windings to give double current output
and 1/2 the CT rating.
If you can safely do this and secure the wires properly, have at it.
