Hmmm, How about using the innards of a traditional PS2 mouse? There
may need to be some gearing in order to get a suitable resolution.
It could be done as a kind of pantagraph with a couple of encoders
in key places. Alternatively think of a drawing board with a
parallel slide and put an encoder on the cable drum. That's got 'Y'
sorted. Something similar on the slide itself will give you 'X'
