I just dusted off one 'encoder' and it has CCW and CW markings on two
of the three connections. Makes me real suspsious that it is a
multi-tun pot. : (

I still have a pair from the plotter so those will be interesting to
try to use.

Once I get a little deeper into the others I'll make a board for the
interface so I can test the out.
