If the display on the scale changes, then no amount of cable shielding

You might try changing the battery in the scale(s). I have a caliper
that's basically the same as these Chinese scales, and I was getting
wacky readings for a while (like 57 inches - it's an 8 inch caliper).
Changed the battery, and all was well (a button had been held down, so
the battery drained faster than normal).
