Yes.
You can also use the center tap and one leg of each winding, leaving the other
leg disconnected.
The latter setup has less resistance and inductance, and so requires a lower
supply voltage and/or can reach a higher speed before the torque starts to fall
off. On the other hand, you cannot use twice the current, so you will get less
max. torque.
