They will work fine, but they are HELL to wind! That's why all normal
power transformers are made with some variation on the E-I core
laminations. The windings can be made on a lathe sort of apparatus,
and then slipped onto one half of the core before the other half
is fitted together.

Big toroid cores are VERY expensive, and are mostly used in high-end
audio equipment due to their very small radiated field.
