I got an XY Mill/Drill table from Enco, going to use it as the basis
of a small milling/engraving table. 7.5 by 11 inch movement.

Already had the steppers, 150 oz-in 4.7A Unipolar NEMA 34. Or do you
think that these will be overkill for this? I also have some NEMA 23,
unknown torque brand new steppers. The leadscrews on the table are
10tpi Acme screws. I'm not planning on trying to cut steel, hardest
material probably plexiglass and aluminum.

I'm considering a small trim/laminate router for this, or my Dremel
since it has speed control built in.

If the smaller steppers will do (I'm guessing they are at least 30
oz-in) I'd rather save the heavier steppers for a future project.
